COVID-19 squashed the vast majority of summer vacation plans where planes were all but required to reach the final destination. My wife and I had two trips planned over the summer, one to Mexico and one to the British Virgin Islands. We had to postpone both trips and decided to fill the void with a couples only getaway weekend to the Grand Hotel Resort & Spa in my hometown of Fairhope, Alabama.

It was a totally debacherous weekend of food and drink. Some folks have cheat days, Diana and I have cheat weekends. We had big plans of leaving the resort for dinner at least one night. It did not happen. We became enamored with the onsite menu offerings. We had room service, pool service, and beach service. We even at at the Bayside Grill twice in one day.
The first two small plate options on the Bayside Grill’s menu are ranked in order of importance. The Pork Belly Tacos and the Caramelized Brussel Sprouts are amazing! I’ve added a photo below for your viewing pleasure. I have not been able to stop thinking about these tacos since that weekend. They’re that good!
